CORTADILLOS

INGREDIENTS:

12 egg yolks. 2 eggs. 1 kg of flour. Olive oil. 1 kg of sugar. 600 ml whole milk. 4 sachets of baking powder. 5 small oil bread rolls. 1 or 2 lemons. Ground cinnamon.

 

PREPARATION:

Beat the egg yolks (they can be the ones left over after using the egg whites to make meringues) with the two whole eggs. Add the milk, fried oil (fried with a lemon peel), sugar, cinnamon, baking powder, and flour, little by little, and continue beating. Once well mixed, pour into a cake mold previously coated with fried oil. Bake at 180 °C for 15-25 minutes. (one "panilla" equals 150 ml, two "panillas" a quarter of a liter of oil, 300 ml).
